Best Chef Knife Set: What a Home Cook Actually Needs
September 27, 2026 · By Matt

The best chef knife set for most home cooks is a small one: a chef knife for everyday prep, a cleaver for joints and heavy chopping, and a boning or slicing knife for trimming and carving. Three good knives in the same steel get used every day, and you skip paying for a block full of passengers.
Knife sets are sold by piece count, which is a bit like selling a truck by the number of cup holders. The number goes up, the price goes up, and the knives you actually reach for stay the same. This guide covers what a home cook really uses, what to look for in steel and handles, and how our four hand forged sets compare, with what is in each one and what it costs today.
How Many Knives Does a Home Cook Actually Use?
Ask anyone who cooks most nights which knives they use, and the answer is usually three. There is one knife that does nearly everything, one heavy knife for the jobs that would hurt the first one, and one long or narrow knife for meat. The rest of the block comes out for a birthday cake and a pizza and then goes back in.
That is not a law of nature, just what happens in most kitchens. If you bake bread, add a bread knife. If you peel apples in your hand, add a paring knife. The core stays at three, and the best knife set for a home chef is built around that core rather than around the slots in a wooden block.
The Working Trio
The chef knife
This is the everyday knife for onions, peppers, herbs, garlic, a chicken breast or a pork loin. A blade with a curved belly rocks on the board and handles most of the prep in a normal week. For the long version, our guide on what a chef knife is used for covers sizes, blade height and grip.
The cleaver
The cleaver takes the jobs that would chip a chef knife. Splitting a whole chicken, cutting through ribs and joints, breaking down a pork shoulder, and chopping a butternut squash that has decided it would rather not be chopped. A thick spine and weight over the edge do the work, so you lift the blade and let it drop.
The boning or slicing knife
The third knife depends on how you cook. If you trim your own meat, a boning knife gets under a fat cap and strips silverskin. If you smoke brisket or carve roasts, a long slicer takes a full slice in one pull. Pick the one that matches your weekends. When people search for the best 3 piece chef knife set, this trio is what they should end up with.
What the 14 Piece Blocks Are Really Selling
The big block sets look generous on the shelf. Open one up and you often find a chef knife, a bread knife, a paring knife, a couple of utility knives nobody can tell apart, a row of steak knives, kitchen shears and a honing rod, all in a wooden block that eats a good chunk of the counter. The pitch is that you are covered for life. What you are mostly buying is slots.
The money has to go somewhere. Spread one price across fourteen pieces and each knife gets a small share of it, so the chef knife you use every night is built to the same budget as the steak knives that come out twice a year. Those blocks also rarely include a cleaver or a proper boning knife, which happen to be the two knives a meat cook needs most.
A professional chef knife set tends to go the other way. Plenty of cooks who work in restaurants carry a short roll of knives they trust and leave everything else at home. A home kitchen can take the same approach and spend the money where the cutting happens.
Steel and Handles Across a Set
One advantage of a set over a random collection is that every blade wants the same care. All four of our sets are high carbon steel. It takes a keen edge and is easy to sharpen at home, and it will rust if you leave it wet. Hand wash, dry right away and wipe on a light coat of food safe oil, and do that for every knife in the set, not only the favorite. Over time the steel darkens into a patina, which is normal. Our high carbon steel knife care guide has the details.
Handles do not have to match to work, and on ours they often do not. The Butcher's Trio mixes wenge, rosewood and black rosewood. The Mastercraft uses rosewood, black rosewood and pakka wood. The Handcrafted 4 Piece and the Meat Lover's Set both come on premium hardwood. Every blade in every set is full tang with steel pins, and each piece is forged on its own in the Serbian style, so no two come out identical.
The Four Xcutlery Sets Compared
Here is what is in each of our hand forged knife sets and what it costs today. Where a listing does not break a set down piece by piece, the table says what the listing says and no more.
| Set | Pieces | What is in it | Price | Best for |
|---|---|---|---|---|
| Handcrafted 4 Piece | 4 | A mix of hand forged chef knives and cleavers | $395 | Cooks who chop a lot and break down meat at home |
| The Butcher's Trio | 3 | 7.5" butcher cleaver (370 g), 8" drop point cleaver, 7" sheep foot cleaver (400 g) | $330 | Home butchers who want cleavers only |
| Mastercraft 4 Piece | 4 | 7" sheep foot cleaver, 8" drop point cleaver, 8" fish and steak cutter, 9" chef knife | $480 | Cooking for a crowd, meat and fish |
| The Meat Lover's Set | 3 | Three hand forged BBQ knives, from heavy breakdown to clean slicing | $412 | Smoker owners who do their own butchering |
Handcrafted 4 Piece
The Handcrafted 4 Piece set is $395 for four hand forged blades, a mix of chef knives and cleavers, on steel pinned hardwood handles. The cleavers take the heavy chopping and butchering, and the chef knives take the slicing and everyday prep. It is not a delicate set, so skip it if you want thin paring knives for garnish work. Of the four, it is the closest to a general chef knife set for a home cook who also handles a lot of meat.
The Butcher's Trio
The Butcher's Trio is $330 and it is honest about what it is: three cleavers and no chef knife. You get a 7.5" classic butcher cleaver at 370 grams with a wenge handle, an 8" drop point cleaver with a rosewood handle, and a 7" sheep foot cleaver at 400 grams with a black rosewood handle. The butcher cleaver carries its weight forward for chopping, while the drop point adds a tip for detail work and the sheep foot handles clean push cuts and mincing. What it will not do well is thin slicing of a finished brisket.
Mastercraft 4 Piece
The Mastercraft 4 Piece set is $480, the priciest of the four and the closest we come to a professional chef knife set. It has a 7" sheep foot cleaver for heavy strikes through dense cuts and bone, an 8" drop point cleaver with a curved belly for thick meat and heavy vegetables, an 8" fish and steak cutter with a hook spine, and a 9" chef knife on a 14" overall length with a pakka wood handle. The two cleavers are listed with the same sizes and handles as the ones in the Butcher's Trio. This is a big set of big knives, and it asks for counter space.
The Meat Lover's Set
The Meat Lover's Set is $412 for three hand forged BBQ knives on full tang, steel pinned hardwood handles. The listing does not break the three blades down by size, so neither will we. It is built to cover meat prep from the first heavy cut on a raw shoulder to the last clean slice at the table. If you want to know every blade size before you buy, the Butcher's Trio lists each one in detail.
Which Set for Which Cook
- You cook most nights and break down meat on weekends. The Handcrafted 4 Piece.
- You buy whole chickens and big cuts and already own a chef knife. The Butcher's Trio.
- You run a smoker and trim your own brisket. The Meat Lover's Set.
- You cook for a crowd and fillet your own fish. The Mastercraft 4 Piece.
Build Your Own Set From Single Knives
A set is convenient, but it is not the only way to get the working trio. You can pick each knife on its own and end up with exactly the shapes you want. A sensible home cook set looks like this:
- The Orca 7" chef knife at $135 for everyday prep.
- The 7.5" Hand Forged Butcher Cleaver at $126 for joints, ribs and poultry bones.
- The Mako 7.5" boning knife at $96 for fat caps and silverskin.
That comes to $357 at today's prices. If you smoke brisket more than you trim it, swap the Mako for the Mamba 11" slicing knife at $112. If you want a taller chef knife that can also handle some light chopping, the Kermode 7" chef cleaver is $119. The upside of building your own is that every piece is one you chose. The downside is that you have to do the choosing, which is how people end up reading guides like this one.
If the set is a present, our guide to giving a knife matches the blade to the person, coin superstition included. And if you are still wondering whether any of this is worth more than a block from the supermarket, the case for and against hand forged knives gives you the honest answer, including the part where we tell you not to buy one.
Questions
What is the best chef knife set for a home cook?
One that covers the jobs you do most: a chef knife for everyday prep, a cleaver for joints and heavy chopping, and a boning or slicing knife for meat. Three good knives in the same steel will get more use than a big block full of pieces you never touch.
How many knives do I really need?
Most home cooks get by on three. A chef knife handles the bulk of the prep, a cleaver takes the heavy work, and a boning or slicing knife covers trimming or carving. Add a bread knife or a paring knife only if you actually bake or peel in the hand.
What is in the Mastercraft 4 Piece set?
A 7" sheep foot cleaver, an 8" drop point cleaver, an 8" fish and steak cutter with a hook spine and a 9" chef knife. All four are hand forged from high carbon steel, full tang with steel pins, and the set is $480.
Is a knife set better than buying single knives?
A set is simpler, and every blade matches in steel and care. Buying single knives lets you pick each shape yourself. An Orca chef knife, the 7.5" butcher cleaver and a Mako boning knife come to $357, which sits inside the price range of our sets.
How do I care for a high carbon steel knife set?
Hand wash every knife, dry it right away and wipe on a light coat of food safe oil. Keep the whole set out of the dishwasher and never leave the knives soaking. The steel will darken into a patina over time, which is normal and helps protect it.
