Meat Cleavers

Our hand forged meat cleaver collection runs from the light 5.5" clip point at 270 grams up to the Mammoth 9.1" at about 1500 grams. For joints, ribs and poultry bones, the 7.5" Hand Forged Butcher Cleaver is the safest single pick, and the Mammoth 9.1" meat cleaver is there for cracking bone for stock. Read our best meat cleaver guide to match the weight to your cooking.

Chef Knives

The chef knife lineup handles everyday prep: vegetables, herbs and boneless meat. The Orca 7" chef knife is the size most home cooks grab without thinking, and the Ironclad 8.7" chef knife gives you more reach for big roasts and melons. Our guide on what a chef knife is used for covers grip, blade height and when to hand the job to a cleaver.

Butcher Knives

In our hand forged butcher knife collection you will find a trimming knife, a cleaver set and a run of butcher cleavers for breaking down meat at home. The Hellfang 5" butcher knife strips silverskin and trims fat caps, and the Kodiak 8" drop point cleaver takes a brisket from trimming to slicing and works through game. Not sure which you need? Read meat cleaver vs butcher knife.

Boning and Fillet Knives

Our boning and fillet knives are the thin blades in the range. The Mako 7.5" boning knife gets under a brisket fat cap and along the ribs, and the Barracuda 13" fillet knife runs from the gill plate to the tail on big fish. The boning knife vs fillet knife guide explains the difference in shape, length and flex.

BBQ and Brisket Knives

For cook day, start with our BBQ knives collection. The Mamba 11" brisket slicing knife crosses a full flat in one pull, and The Meat Lover's Set covers a brisket from trimming the raw cut to slicing it once it has rested. Our guide on which knife to slice brisket with compares the options.

Knife Sets

Our hand forged knife sets put three or four blades in one box. The Handcrafted 4 Piece Set mixes chef knives and cleavers for general cooking, and The Butcher's Trio is three cleavers for people who break down big cuts themselves. Compare all four in our best chef knife set guide.

Gifts

Our knife gifts collection gathers the knives that make sense as a present. The Chef's Kiss 7" Serbian chef knife suits the cook who already owns a block full of knives, and the Aurochs 6" spear point cleaver suits the friend who hosts every cookout. Our guide to knife gifts by person and budget matches a blade to the person.

Best Sellers

Our best sellers collect the knives people order most. The Kraken 8" cleaver and the Warthog 6" meat cleaver are both on it. If you are wondering whether a hand forged knife is worth the price at all, read are hand forged knives worth it.

How to Choose

Start with the job, not the look. If you cut through joints and bone, you want a cleaver, and a heavier one for bigger bones. If you mostly cut vegetables and boneless meat, you want a chef knife. Trimming fat and silverskin calls for a boning knife or a small butcher knife, and fish calls for a fillet knife. A cooked brisket wants a long slicer, because a short blade saws. If you cook a bit of everything, a set saves you choosing four knives one at a time.

Care, Warranty and Returns

Every knife here is high carbon steel. It takes a keen edge and is easy to sharpen at home, and it rusts if you leave it wet. Hand wash it, dry it right away and wipe on a light coat of food safe oil. No dishwasher and no soaking. Over time the steel darkens into a patina, which is normal. Our care guide for high carbon steel knives covers the full routine. Every knife carries a lifetime warranty against defects in materials and craftsmanship, unused knives can be returned within 30 days, and shipping is free in the USA and Australia. Custom knives take 2 to 3 weeks to make and cannot be returned.

Questions

Are all Xcutlery knives hand forged?

Yes. Every knife is hand forged from high carbon steel in the Serbian style, full tang, with the handle held on by steel pins. Each blade is hammered on its own, so no two look exactly the same.

Which knife should I buy first?

Buy for the job you do most. A chef knife like the Orca 7" handles everyday prep, and a meat cleaver like the 7.5" Hand Forged Butcher Cleaver handles joints, ribs and poultry bones. If you smoke brisket, the Mamba 11" is the slicer to add.

Is shipping free?

Shipping is free in the USA and Australia. Orders to the rest of the world are charged at the rate shown at checkout.

What warranty and returns do you offer?

Every knife carries a lifetime warranty against defects in materials and craftsmanship. Unused knives can be returned within 30 days. Custom knives take 2 to 3 weeks to make and cannot be returned.

How do I stop a high carbon steel knife from rusting?

Hand wash it, dry it right away and wipe on a light coat of food safe oil. Keep it out of the dishwasher and never leave it soaking. The steel darkens into a patina over time, which is normal and helps protect it.
