Description
The Kodiak is an 8" butcher cleaver with a drop point, which makes it the odd one out in our cleaver lineup and the one pitmasters keep asking about. It carries the weight of a meat cleaver up front and a curved belly you can actually carve with, so one blade takes a brisket from trimming to slicing. High carbon steel, rosewood handle, forge scale left on the flats.
On the Board After a Long Cook
Brisket is where the Kodiak earns its keep. Trim the point and flat before it goes on, then carve after the rest without swapping knives. It is just as happy breaking down a pork shoulder or working through game. What it is not is a bone splitter. The Steel
Every Xcutlery blade is high carbon steel, hand forged one at a time in the Serbian style: thick stock, a lot of hammer work, and the forge finish left on the flats.
Serbian style blades are forged thick and hammered flat by hand, and the flats keep the dark scale that comes off the fire. On the Kodiak the tip was pulled down into a drop point instead of the usual square nose. That gives you a point for scoring a fat cap and working around a shoulder blade, while the spine still keeps plenty of mass behind the edge. Cut meat has less to grab onto, so slices fall away instead of riding up the blade.
Why high carbon steel
It takes a very fine edge and comes back quickly on a whetstone. The price of that edge is a little care. This steel is not a rust resistant alloy, so water left on the blade will mark it. Wash it, dry it, wipe on a light coat of oil, and it will be cutting long after the cutting board has given up.
Patina
With use the steel darkens to a grey or blue patina. That is normal for high carbon steel and it helps protect the blade. Red rust is a different thing, and it comes from a knife left wet.

Care and Use
High carbon steel rusts if it sits wet, so hand wash it and dry it right away. Wipe on a light coat of food safe oil before it goes back on the rack. No dishwasher and no soaking in the sink.

Lifetime Warranty
Every Xcutlery knife is covered for life against defects in materials and craftsmanship. If a handle works loose from the tang, a pin comes free, or there is a flaw in the steel or the build that came from us, we repair or replace it free of charge.
It does not cover normal wear such as a dull edge, damage from misuse, or rust from the dishwasher or soaking. Slight differences in forge texture, hammer marks and wood grain are part of a handmade knife, not defects.

Questions
Is the Kodiak good for brisket?
Yes, that is the job it was shaped for. The drop point handles trimming before the cook and the curved belly carves after it, so you only need one blade.
Does it cut bone?
It is built for meat, joints and game breakdown rather than heavy bone. For splitting thick bones, a heavier cleaver like the Mammoth is the right tool.
Does it come sharp?
Yes. It ships with a polished edge and is ready to work out of the box. Every knife is covered by a lifetime warranty against defects in materials and craftsmanship.
How do I stop it rusting?
Dry it the moment you finish washing it and keep a thin coat of food safe oil on the blade between uses. Over time high carbon steel darkens into a patina, which is normal and actually helps protect it.
